The olives brought by our local farmers are carefully collected in specialized crates, known as 'bins'. To ensure the highest quality, they are processed within six hours of harvest.
The first step in our milling process is de-leafing. This fundamental stage removes leaves and small twigs to ensure the superior quality of our extra virgin olive oil. Eliminating foliage is crucial: the chlorophyll contained in the leaves, if processed with the olives, would result in an overly bitter, astringent, and unbalanced oil.
Washing is a critical step in our oil production process, essential for removing impurities such as soil and stones before crushing. The olives are submerged in a tank where air bubbles keep the water in constant motion, effectively separating debris and earth from the fruit. Finally, a fresh-water rinse removes any remaining residue, followed by a drainage phase to ensure the olives are perfectly prepared for the mill.
Crushing is the initial mechanical stage in transforming olives into paste, where the fruit is shattered to create a uniform mass. Our process utilizes a state-of-the-art double-grid hammer crusher. This technology is crucial for maintaining the oil's organoleptic profile, as it preserves delicate aromas and vital health-promoting properties by preventing any overheating of the olive paste.
Malaxing is a cornerstone of our production process. After crushing, the olive paste is transferred to the malaxer via mechanical pumps, ensuring it never comes into contact with light or air. Inside the malaxer, the paste is gently mixed at a strictly controlled temperature, never exceeding 27°C (80°F). This critical stage facilitates the separation of oil from water while preserving the oil's quality and aromatic profile.
Following the malaxing process, the paste moves to the separation stage. This is performed using a horizontal centrifuge, known as a 'decanter'. By utilizing centrifugal force and differences in specific weight, the decanter effectively separates the olive paste into its three components: oil, water, and pomace.
As the final step, the oil undergoes a second stage of separation using a vertical centrifuge, known as the 'separator'. This process is essential for the clarification of our olive oil, effectively removing any remaining microscopic impurities and traces of water, ensuring absolute purity before the oil is stored
